Vinification: Maceration precedes alcoholic and malolactic fermentations in conical vats. Whole cluster and destemmed grape usage varies per winemaker’s discretion, with punch downs and pump overs applied as necessary.

Ageing: Prolonged 10-12 month maturation in 225L Demptos Bordeaux barrels of diverse oak origins and toasts adds complexity. Select barrels experience an additional 10-12 months in upright and lying Garbellotto oval casks. A minimum 2-year bottle aging follows before commercialization, offering depth and complexity for immediate enjoyment or further cellaring.
