Vinification: Post-destemming, grapes undergo a protracted skin maceration, followed by low-pressure direct pressing, cold settling, and alcoholic fermentation in 300-400L Demptos French oak barrels. Regular lees stirring occurs without malolactic fermentation.

Ageing: Wine matures on fine lees for 10-12 months in 600L Demptos 1/2 muids, followed by 12-24 months of horizontal cellar aging before consumption.

A highly-generous and fruit-forward vintage, exuding power and roundedness.

The nose is marvellously complex, a symphony of orange blossom and brioche that entrances the senses. On the palate, the wine remains refreshing, with a lively acidity that is beautifully tempered by a delicate hint of iodine. A subtle bitterness lingers, bringing forth the full spectrum of citrus zest, yuzu, and bergamot. The wine's texture is smooth and silky, with a roundness that is redolent of soft almond paste, delicately honeyed. The finish is both elegant and intriguing, with a perfect balance between the familiar notes of vanilla and a tantalizing hint of salted butter caramel, evocative of our terroir's unique iodized touch. The final aromatic complexity is truly natural, an exquisite embodiment of this vintage's terroir.

2020

A refined and elegant Vermentino, exhibiting great finesse and a distinctly feminine character.

The nose is redolent of citrus peel and delicate lemon verbena flowers, giving way to a fine and slightly brioche-like palate. Hints of Bourbon vanilla and a subtle bitterness add depth, while notes of yuzu are prolonged through to the finish. The silky and supple texture is complemented by a hazelnut and salted butter finish, resulting in an authentic and complex wine, free from any artificial notes.

2021

The vinification process for the 2021 vintage of this wine has resulted in a near-perfect balance, showcasing qualities that lie somewhere between those of the 2019 and 2020 vintages.

Having been bottled in June of 2022, the wine is currently maturing horizontally in the cellar. Regular tastings will be conducted to monitor its development and ensure that it meets the desired quality standards before being labeled and made available for purchase. The wine is expected to be released for sale between the months of July and September in 2023, depending on the outcome of these successive tastings.
