Vinification: Grapes undergo destemming, followed by an extended maceration and pressing in a 9-hL capacity press. Cold settling precedes alcoholic fermentation, partially in tanks and conical trunks.

Ageing: Wine matures on fine lees for 8-12 months, contingent on vintage, in 300-400L Bordeaux Demptos oak barrels and 600L French oak half-muids. Select vintages age in French oval foudres with initial frequent stirring. Malolactic fermentation is excluded.

2019

A very generous and powerful vintage with roundness and fruit.

The blend includes Cabernet Sauvignon, Cinsault, and Grenache.

The nose is complex with notes of orange blossom, sweet spices such as coriander and clove, and a touch of green pepper. The palate is fresh, acidic, and slightly iodized, with a touch of bitterness that prolongs the aromas of citrus zest, orange, and bergamot. The wine has a round texture and a silky, slightly honeyed almond paste with a final touch of vanilla and salted caramel, which is typical of our terroir. The complexity of the final aromatic bouquet is entirely natural, making this rosé wine perfect for gastronomy.

Ageing potential: very long aging potential, 10 to 15 years without any issues.

2021

An elegant vintage with perfect acidity for long ageing.

The blend includes Cabernet Sauvignon and Cinsault.

The bouquet is delicate and fragrant, exuding lovely floral notes of peach blossom and orange blossom, complemented by subtle hints of coriander and a slightly woody liquorice aroma. The palate is refined and elegant, revealing a subtle peppery taste reminiscent of Muntok or Sarawak white pepper, and a delicate, finely licorice-flavored almond paste after decanting. The finish is iodized with a touch of bitterness, extending the wine's complexity and nuance. With a silky and supple texture, the wine has a lingering and satisfying finish, leaving the palate salivating and yearning for more. This wine is an excellent accompaniment to a wide range of dishes, showcasing its versatility and complexity.
