Le « Petit Blanc » AOP Côtes de Provence
Vinification: Grapes experience destemming and subsequent pellicular maceration of variable duration. Juice extraction follows via direct pressing, with fermentation in acacia wood conical trunks. The wine undergoes gentle lees stirring and cold settling without malolactic fermentation.
Aging: Extended sur lie aging occurs in acacia wood oval casks, contributing complexity over 8-10 months before bottling and distribution.

With a fresh and lively nose, this wine presents a subtle woody note, accompanied by delicate white flower aromas of acacia and elderberry. On the palate, it boasts a long and elegant mouthfeel that is impeccably balanced and refreshing, featuring vibrant notes of citrus, verbena, and white-fleshed fruits. The structure is characterized by very fine tannins, straight with a touch of roundness, leading to a complex and natural aromatic finish that is nothing short of remarkable, particularly given the challenging southern terroir.
Ageing potential: 1 to 5 years.
